Whiskey Ginger, Lime & Gin Fizz, Lemon-Lime & Bitters Punch

WHISKEY GINGER

This is inspired by my time shooting Lyndey Milan’s Taste of Ireland. I discovered a love of Irish whiskey!

Serves 1

INGREDIENTS
30ml Irish whiskey
5ml lime juice cordial
ginger beer to taste
Few drops of bitters
Lime zest twist

METHOD
Combine whiskey and lime juice cordial in a glass.  Top with ginger beer.  Add a few drops of bitters and a lime twist.

KAFFIR LIME GIN FIZZ
This recipe has a double dose of lime flavouring.  The lime juice gives it the tang and a kaffir lime leaf is added for garnish.

INGREDIENTS
1/2 cup water
1 cup sugar
6 kaffir lime leaves, crushed
Ice cubes
1/4 cup lime juice
1/4 cup (60ml) gin
1/4 cup (60ml) tonic or soda water (or more to taste)
1 small kaffir lime leaf, extra, for garnish

METHOD
Make a syrup by combining water, sugar and kaffir lime in a small saucepan over medium heat. Stir until the sugar is dissolved then reduce heat and simmer for 5 minutes or until slightly thickened. Strain and cool.
Place ice cubes in a glass, then pour over 2 tablespoons kaffir lime syrup, lime juice and gin. Swizzle then top up with tonic water and garnish with kaffir lime leaves.

LEMON, LIME & BITTERS PUNCH 
A refreshing drink for all the family.  It looks good and tastes better!

Makes 1.25 litres
Preparation 10 minutes (plus 10 chilling time)

INGREDIENTS
3 lemon infusion tea bags
2 cups (500ml) boiling water
600ml lemonade
30ml lime juice cordial
1/2  teaspoon aromatic bitters
1 cup ice cubes
1 lime, sliced thinly

METHOD
Combine tea bags and boiling water in a large jug, stand to infuse for 5 minutes. Remove tea bags; cool to room temperature, then refrigerate until cold.
Add remaining ingredients to jug and serve immediately.
