So, you consider yourself somewhat of a Mexican food maestro, who has worked out how to make a guac that rocks. But, if you want your take on this classic taco side to really resemble one of the best, then try this recipe by Mejico – the popular Mexican eatery whose table side prep of the delicious avo dip has earned them the status of Sydney’s freshest guacamole.
INGREDIENTS
1 teaspoon of chopped serrano chilli
20g of finely chopped red onion
20g of chopped coriander
Lime juice mix (half a juiced lime, pinch of salt and a pinch of brown sugar to taste)
One ripe Australian avocado
¼ of a squeezed lime
INSTRUCTIONS
In a heavy stone mortar mix the serrano chilli, red onion, coriander and lime juice mix together with a spoon for 30 seconds. Lime juice helps to soften the onion and take the bite out!
Scoop the Australian avocado into mortar and using a stone pestle, smash the avocado until its at your desired consistency – a few lumps are great
Use the spoon again to make sure all your ingredients are fully mixed together and top if off with a squeeze of lime juice.
Serve with spiced plantain chips or corn chips.
