Try these Do It Yourself Lamingtons by Elise Strachan

INGREDIENTS
1 x pre-made rectangular sponge cake (contains 2 sponge pieces)
2 cups powdered sugar, sifted
30g unsweetened cocoa powder
2tbsp (approx.) water
Coconut / Sprinkles / Crumbled chocolate (flake) to coat your lamingtons

METHOD
1 Cut your cake into neat squares or rectangles using a serrated edge knife
2 Combine cocoa powder and icing sugar and stir.
3 Add water a little at a time and stir until you have a nice gooey consistency – not too runny or you wont get an even coating
4 Using a fork, gently dip the sponge into the icing mixture coating it completely and gently shake off any excess
5 Over a sheet of baking paper sprinkle on either coconut, sprinkles or flake and set on some baking paper to dry.
6 You should be able to touch and move the set lamingtons once the icing has dried.
