Saigon Red Cocktail
INGREDIENTS
1/4 red dragonfruit (sml-med size) fresh fruit
1 barspoon chopped ginger
1 barspoon chopped lemongrass
1 sprig of Vietnamese mint
20ml Lime juice
30ml Vodka
15 ml Ginger piquer
10ml simple sugar syrup
METHOD
1 Muddle ginger, mint and lemongrass in a shaker. Add chopped dragon fruit, lime juice, vodka, ginger liqueur and simple sugar and shake hard.
2 Double strain into pilsner or sling glass. Fill with ice and top with soda. Garnish with mint and wedge of dragon fruit.
