Try This Natural Pro-biotic: Coconut Yogurt With Acai And Blueberry

Why just take pro-biotic tablets when you can turn them into amazing coconut yogurt? 

 | Vegan | Raw | Paleo | Dairy Free | Gluten Free

Serves 3

INGREDIENTS

3 cups Organic Coconut Milk
2 pro-biotic gel capsules
Large glass jar with lid
2 tbsp. Organic Coconut Nectar
1/4 cup blueberries
3 tsp. Acai Powder

METHOD

1 Sterilise your jar with boiling water
2 Add coconut milk, pro-biotic capsules and stir
3 Leave jar in a sunny place for around 8-12 hours. A bench underneath a window works well!
4 Pop jar in fridge. Chill for another 12 hours.
5 Add Coconut Nectar, blueberries and acai powder and enjoy!

Cook’s Notes: After 12 hours the yogurt will still be a little watery. With each day passing the mixture will begin to thicken. By day 4 the coconut yogurt should resemble Greek yogurt thickness.
