Adding lentils to a mild curry provides a good source of protein and iron. Combined with butternut squash and tenderly cooked chicken, your baby will love this sweet flavoursome dish. For vegetarian babies, simply leave out the chicken as the pulses will provide plenty of nutrients.
2 tsp olive oil
1/2 onion, peeled and diced
1 clove garlic, crushed
2 tsp mild curry paste
20g (1oz) red lentils
400g can chopped tomatoes
100ml (4fl oz) unsalted
75g (3oz) butternut squash,
peeled and diced
1 boneless, skinless
chicken breast, diced
1/2 tsp mango chutney
1 Heat the oil in a saucepan, then fry the onion and garlic for 2 minutes.
2 Add the curry paste and lentils, then stir in the tomatoes.
3 Cover with a lid and simmer for 10 minutes.
4 Add the chicken stock, squash, chicken chunks and mango chutney and simmer for another 10 minutes until tender.
