INGREDIENTS

200 gr castor sugar
200 gr diced butter
200 gr plain flour
4 whole eggs
Lemon zest, finely grated

METHOD

1 Preheat oven to 160 degrees with fan (or 180 degrees without fan)
2 Beat all ingredients together with an electric mixer until well combined for approx. 5 minutes.
3 Split between 2 greased and lined cake tins
4 Place in the middle of the oven for even cooking for 20 minutes.
5 Flip onto flat surface to cool.

To decorate

INGREDIENTS
Cream and fruit filling to taste
Icing sugar to sprinkle

METHOD
1 Place filling of choice on top of the first cake, cover with second cake and decorate with icing sugar.
