Gluten Free Quinoa And Chia Bread Recipe From Kamalaya

Quinoa is more popular than ever and we know why. It’s tasty and healthy too. But for all those quinoa fans, you must try this incredible recipe from Kamalaya Health Spa in Koh Samui, Thailand.

Here, the co-founder Karin Stewart explains why it’s so popular.

The quinoa and chia seed bread is one of the delicious gluten free bread options on Kamalaya’s healthy breakfast menu.

Quinoa as well as chia seeds are rich in complete plant protein containing all the essential amino acids the body needs for healthy growth and repair mechanisms.

This bread is low GI and contains neither gluten, dairy, egg nor sugar, so it’s perfect for anyone with a food allergy or intolerance.

Quinoa And Chia Bread Recipe

INGREDIENTS
300g quinoa seeds
60g chia seeds
60 ml coconut oil
3g baking soda
3g salt
10g lemon juice

METHOD
1 The first important step is to soak the quinoa seeds in cold water overnight in the fridge.
2 The chia seeds also need to be soaked; usually 15 minutes are enough until they become gel like. Rinse the quinoa seeds and fully drain the water through a sieve, before you put them in a food processor for 3 minutes. The consistency of the mix should resemble batter with a few whole seeds in it.
3 Now you can simply add the chia gel and all the other ingredients into the food processor and mix them for about 3 more minutes.
4 Finally, put the mix in a loaf tin lined with baking paper and slowly bake in an oven at 170 degrees, for 90 minutes.
5 Before taking it out of the tin, let it cool down for 30 minutes
