Fish en Papillote

Serves 4

INGREDIENTS
4 white fish fillets
1/2 lemon sliced
1 clove garlic, sliced finely
8 sprigs thyme
300g roasted pumpkin
1 cup mixed quinoa, cooked
100g spinach
8 tbsp. feta cheese, low fat

METHOD
1 Preheat the oven to 200°C.
2 Tear off 4 large pieces of baking paper and cut into the shape of a heart.
3 Place the fish fillet in the middle of one side of the heart.
4 Along the top side of the fillets place the sliced lemon, garlic, 2 sprigs of thyme and drizzle with a little oil.
5 Fold the other side of the heart over to cover the fish and begin tightly crimping the edges together using the ends to twist and seal the package.
6 Bake for 10-12 minutes in the oven.
7 Meanwhile combine the remaining ingredients in a large salad bowl to create the side salad for the dish.
8 Serve alongside the fish once cooked.
